Easy quinoa recipes

I always talk about how easy is to cook quinoa. That is what I love about it, you don't have to spend too much time in the kitchen and you'll get delicious result. 

I think Kathryn Budig agrees with me because she has a great quinoa recipe too on the Mind Body Green website.

She writes:

Not only can it blend in beautifully with any sauce or flavor, it is packed full of protein, gluten-free and only takes 10-15 minutes to make.

Nutty quinoa salad

Thanks to Donna from The Daily Ground blog I found this great quinoa salad recipe which is full of healthy ingredients like spinach, cucumber, pomegranate and of course quinoa.

Donna wrote:

Last night I was in the mood for something seasonal and refreshing, which is not usually what you think of in winter. So we made a salad with what we had in the refrigerator and it was delicious. This is one of those meals that you feel good after; lightly filled with nutritious food.

Quinoa and sweet potatoes

Another great winter recipe which is perfect comfort food in this wintry weather.

These are the ingredients:

Ingredients
1.5 cups quinoa, rinsed thoroughly in a fine mesh strainer
1 cup broth (chicken or veggie)
1/8 to 1/4 cup oil (I used Garlic Grapeseed)
1 onion, chopped (I used 1/2 red and 1 small white)
1 bulb of fennel, chopped (optional) 
3-4 garlic cloves, chopped
2-3 teaspoons dried thyme
3 medium sweet potatoes, washed and cut into bit size pieces* 
1 cup frozen edamame (baby soybeans)
1 bunch greens, washed and finely chopped (kale or collards would be my first 2 choices, but use what you've got)
1/2 cup unsalted sunflower seeds, roasted
fresh parsley, chopped
salt and pepper to taste

*smaller pieces = reduced cooking time

Quinoa croquettes

Laura Everage from Edible Tidbits blog has came up with this healthy and simple quinoa recipe. She serves them with Cilantro yoghurt sauce. It sounds delicious!

According to Laura:

...researchers often say, ‘Quinoa is close to one of the most complete foods in nature because it contains amino acids, enzymes, vitamins and minerals, fiber, antioxidants, and phytonutrients.’  I guess I can see why the Incans referred to it as the ‘grain of the gods.’
Yes, I love quinoa -- with its nutty, somewhat toothsome bite. And, whenever I have it I just can’t get enough. Problem is, I don’t prepare it often enough.

Easy quinoa vegetarian recipe - Quinoa with grilled vegetables

During winter we all need more vitamins and this recipe is definitely a health booster.

 I’m always searching for a good side dish to serve and I’ve also been dying to find recipes that call for quinoa, a healthy grain with a nutty, fluffy texture. This recipe is vegetarian vegan and was a hit at my house tonight. The presentation is full of color to brighten up any table! I served it with chicken apple sausage. The recipe is from my Trader Joe’s cookbook but you can find most of these ingredients at any local grocery store.

Moroccan Quinoa Salad - my memories from Marrakesh

Morocco is one of my favorite countries in the whole world. I can't tell you why, I just love it, especially Marrakesh. It's such an amazing place where nothing is impossible, it's magical.

I was really happy when I found this Moroccan Quinoa Salad recipe it reminds me the great time I had there.

The recipe is pretty easy and you only need fresh veggies and off you go.

After all the indulging this weekend we wanted to make something light and fresh. We decided on this Moroccan Quinoa Salad. They would probably serve it with couscous in Morocco but we prefer quinoa as it is richer in protein and is gluten free.

Stuffed Cabbage Quinoa

I think this recipe is definitely awesome. Gluten-free goddess is one of my favorite bloggers who came up with this great and very filling - yet healthy recipe.

Maybe it's not as easy as the other quinoa recipes I came across but it's worth to try.

She writes:

Traditional stuffed cabbage often features rice and crumbled beef, and while I'm a fan of that classic combo I decided to change things up and create a stuffing with autumn roasted flavors instead. Note: I've added sweet sausage to this filling, but you easily keep it vegan. Just omit the sausage and serve with a side of hummus.

Her pictures are amazing too, I just wan to eat those lovely stuffed cabbages:) Although it's a fall recipe, I think it's perfect for these cold winter evenings too!

“Cinnamon Toast” Amaranth Quinoa Protein Power Cereal

Wow, that's a long name for a recipe but a very delicious quinoa breakfast. It's pretty easy to make - I don't think that you spend more than 20-30 minutes in the kitchen when you prepare quinoa anyway. This quinoa breakfast recipe is healthy, filling and the most important thing is that you put cinnamon in it which I truly love. Heather Crosby writes:

This cereal tastes a lot like buttery cinnamon toast, which reminds me of my grandmother, which is why I chose her vintage bowl for this shot.

How to make quinoa in the microwave

I don't really like cooking in microwave but when you don't have time Ehow will tech you how to do it properly.

Tip from them:

If the quinoa is too watery after you have cooked it in the microwave, pour it into the strainer you used while rinsing the quinoa. Shake the strainer gently to allow any excess water to drain off.

Try stir-fried quinoa instead of rice

You probably couldn't imagine your stir-fry without rice.

Well, I have good news for you. You can stir-fry quinoa too.

Martha Rosa Shulman came up with this brilliant stir-fry recipe in the New York Times.

She says:

I’ve substituted cooked quinoa here for rice. You can use either regular or royal red quinoa for this dish. As with all stir-fries, once all the ingredients for this one are prepped, the cooking takes less than five minutes.

That sounds good to me, quick, easy and delicious... very yummy:)

3 very yummy quinoa recipes - it is a must try

Thanks to Meal Makeover Moms I found these very good quinoa recipes. 

They look pretty good and I am sure they taste fabulous too:)

This is just one of them:

Roasted Quinoa with Potatoes and Cheese

Makes 4 to 6 Servings 

  • 1 pound Yukon Gold potatoes, peeled if you like, and cut lengthwise into wedges
  • 3 to 4 cloves garlic, peeled
  • Salt
  • ¾ cup quinoa
  • Freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • ¼ cup scallion, sliced
  • 1 small red bell pepper, cored, seeded, and chopped (about 1 cup)
  • Hot red pepper flakes or cayenne to taste
  • 4 ounces reduced-fat shredded Cheddar cheese (1 cup)
  • ¼ cup minced parsley for garnish

1. Preheat the oven to 400°F . Grease an 8 x 10 inch (or 9 x 9 inch) roasting pan with nonstick cooking spray.

2. Put the potato wedges and garlic into a large pot with water to cover, salt it, and turn the heat to high. When the water begins to boil, stir in the quinoa. Adjust the heat so that the water boils assertively and cook, stirring once or twice, for about 5 minutes.

3. Drain the quinoa, garlic, and potatoes in a strainer, but leave them fairly wet. Spread them into the prepared pan, sprinkle with salt and pepper, drizzle with the olive oil, and gently toss with a spatula. Spread them out again. Roast, undisturbed, for 15 minutes. Gently toss again, scraping up any browned bits from the bottom of the pan, and return the pan to the oven for another 10 minutes or so, until the potatoes are tender on the inside and golden on the outside.

4. Add the scallion, bell pepper, and red pepper flakes and toss everything one last time. Taste and adjust the seasoning, keeping in mind that the cheese will add some saltiness. Spread the cheese over all and return to the oven for another 5-8 minutes, until the cheese is melted and bubbling. Sprinkle with parsley and serve.

Interesting article about smaller waist

According to The Globe and Mail:

"If you’re striving to reduce your waist size, consider swapping refined grains in your diet for whole grains.

According to a study of 2,834 middle-aged Americans, those who consumed the most whole-grain foods had a significantly smaller waist circumference.

Having a large waist circumference – 94 centimetres (37 inches) or greater for men and 80 cm (31.5 inches) or greater for women – increases the likelihood of type 2 diabetes, high blood pressure, elevated cholesterol, heart attack, stroke, metabolic syndrome and some cancers."

 

This sounds pretty interesting.

Quinoa Diet – the secret Incan “weapon”

There are so many diets out there and to be honest most of us are fed up with them – you may think that quinoa diet is just one of them.
Well, I have good news for you. The story of this Incan sacred food or secret weapon started about 6000 years ago. Incan warriors could survive on this super food - of course they didn’t know that term back then – for days when they were fighting with their enemies and didn’t have anything else to eat.
